Chocolate Raspberry Bars

I never make this dessert unless I am having people over or taking it somewhere because it is SO GOOD that I could literally eat the whole pan. If you like chocolate & raspberry, you will love this recipe!


You'll need:

  • 1 package of brownie mix
  • 1 egg
  • 1/3 cup butter, softened
  • 1 (12 ounce) jar seedless raspberry jam--IF you get a bigger jar of jam, feel free to use the whole thing anyway. I usually get about 16 ounces. Seriously, the "gooey-er" the better! :)
For the topping:
  • 1 (10 ounce) package vanilla or white chocolate chips
  • 1 (8 ounce) package cream cheese, softened
  • 2 tablespoons milk
  • 1/2 cup semisweet chocolate chips
  • 2 tablespoons butter (no substitutes)

What to do:
  1. Make and bake brownies according to box instructions.
  2. Spread WHOLE JAR of jam over brownies.
  3. Melt the vanilla chips, stir until smooth.
  4. Mix cream cheese and milk until smooth, then add the vanilla chips. Spread this mixture over the raspberry jam.
  5. Melt chocolate chips and butter; stir until smooth. Drizzle or pipe over the cream cheese layer.
  6. Refrigerate before cutting.
IF you want to make these as bars for the kids or to take somewhere, you will need to refrigerate these for at least 3 or 4 hours before cutting. When you cut them, the top layer will be hard like a candy bar.

Another GREAT way to enjoy these though is to cut a few pieces before refrigerating. This is a messy way to eat them, and they taste SO rich and good! It's great if you like to eat cookies/brownies right out of the oven and goes great with vanilla ice cream too.

You should be able to find them at any grocery store. I can usually find them at Walmart.
